  • Pizza is arguably Italy's most famous dish and can now be found all over the world. We're most familiar with takeaway and even frozen pizza but once you've made your very own pizza from scratch, there really is no going back.
    In this video, Italian chef, Gennaro Contaldo shows you how to make homemade pizza at home - don't worry, you don't need a wood oven to follow this recipe. Here you'll learn how to make, knead and shape the dough before topping with delicious Parma ham and fresh rocket for a simple yet delicious meal!

    Ingredients
    (makes 2 x large pizzas)
    For the dough
    500g strong flour
    5g salt
    10g fresh yeast
    325ml lukewarm water
    Topping for Margherita
    150g tinned chopped tomatoes or tomato passata
    Salt & pepper
    1 x tablespoons extra virgin olive oil & extra for drizzling
    1 x tablespoon grated parmesan cheese
    1 x ball mozzarella
    A few fresh basil leaves
    Topping for Prosciutto & Rocket
    Extra virgin olive oil for drizzling
    1 x ball mozzarella
    1 x tablespoon grated parmesan
    4 x slices of Parma ham
    Handful of rocket
    Juice of ½ lemon
    Method
    First make the dough. Dissolve the yeast in the lukewarm water. Combine flour and salt in a large bowl. Gradually add the yeast mixture, mixing well until you obtain a dough. Place dough on a lightly floured work surface and knead for about 10 minutes. Cover with a cloth or cling film and leave to rest in a warm place for at least 30 minutes until the dough has doubled in size.
    Preheat the oven to 220 degrees centigrade.
    Take the dough, knock it back, then divide into two pieces, cover each with a cloth and leave to rest in a warm place for a further 30 minutes.
    Meanwhile prepare the toppings. For the Margherita, place tomatoes or passata in a small bowl, season with salt & pepper and stir in 1 tablespoon of extra virgin olive oil. Roughly chop the mozzarella.
    Sprinkle some flour onto a clean work surface and with your fingers spread each piece of dough into a roughly round shape with a border, make the dough as thin as you can but be careful not to tear it. Sprinkle some semolina or flour onto 2 large flat baking trays and place the pizza bases on them.
    Drizzle a little extra virgin olive oil over each base. On one, spread the tomato mixture evenly over, sprinkle with parmesan, scatter a few basil leaves over and top with mozzarella.
    On the other base, arrange mozzarella and parmesan all over, top with Parma ham.
    Place both pizzas into the hot oven and bake for 8 - 10 minutes.
    In the meantime, toss the rocket in a little extra virgin olive oil and lemon juice.
    Remove the pizzas from the oven, top the Parma ham pizza with rocket and serve immediately.

    Why he put parma into an oven? It may result in an overdried piece of expensive meat?! Otherwise, good video!

      As far as I know it's correct to put it in the oven but I'm not an expert. In any case, not all Parma is actually the best Parma and it isn't unreasonable to use a less expensive one for making a pizza.

    It's a soft flour for shure..like a type 550 in video.
    I use 70% of soft flour and 30% hard flour , and hit about 300C° in Owen.

      If you convert the recipe:
      500grams flour- 17.64oz
      5grams salt - .18oz
      10grams yeast - .35oz
      Which one is easier to remember?
      In metric, the higher or lower you go you either add (k) when you reach a thousand (e.g. km, kg) or when you go down you add (m) to a thousandth (e.g. mm, mg)
      In imperial, you have to convert inches to yards to miles, or cups to quarts to gallons, or ounce to pounds to tons.
      So, no, it’s not simple.
      Metric is easier.

    Dear, Seniore Contaldo,
    I have a rather strange problem with my Pizza. It does not smell like Pizza, in fact it has no fragrance at all. I already know from experience that the Pizza gets better depending on ingredients and the longer the yeast is working. I also use herbs and everything and while I have also produced some Pizzas that tasted like the real deal they always lack fragrance. Can you help me?

    if you don't have directly access to 'strong flour' or it's too expensive, you can get yourself a bag of gluten and experiment a bit with your regular flour and enriching it with gluten to get a good elasticity!

    I cook using technique called: cook with what you got at home...
    So I tryied all kind of flours, all kind of cheap solutions as well as expensive ones.
    Soft flour is really bad. You can make decent dough, but it is lacking taste, even if you add beer or paprika powder to make orange dough, it will still lack taste.
    In terms of cheap solution medium flour is sufficient, but I personally like bread flour, since italian one is not easy to find in my area. I usually add beer to water with yeast. I choose beers with yeasty taste. How much you use depends on how yeasty and aromatic used beer is. If it is too aromatic you can do water/beer 50:50. I would use beer only, if the beer really has this taste, that it really feels like it was made for baking.

    use less yeast, like 2-3g for that amount of flour and let the dough sit at room temp for 5+ hours and you will get a lot better flavour and you can still call it homemade..

    I put a stone plate in a charcoal bbq. Make sure it's really hot, keep the lid on and you'll get good results.

    there is no need to learn so much about pizza. What is required is a special oven which goes up to 800°C. Otherwise, with a normal stove which goes up to 200°C, this is not a pizza.

    Put Dough Ball under damp cloth for 30min
    Knead dough, again proof for 30min

    Gennaro - thank you. This was the best pizza dough I ever made in my life. The crust was cripsy on the outside, soft and tender-chewy. I used my sheet pan upside-down as a peel to bake it on. Perfect. I'll be following this recipe from now on. Easy to remember the measurements too.
