    That's no way to cook a steak in damn pan. This city boy is also a farm boy with family generations growing cattle, making cured meats from Italy, cheeses with vineyards. You dry age a nice Angus steak and cook in over 25-30 year old vines stems.

    In Argentina we have something that is like somewhere in between a clay oven and a regular grill that cooks the whole thing at the same time, which is weird because the edges look pinker than the middle, but even if it is done, if you cook it slowly you cannot tell the difference with the texture, tenderness and flavor of a medium rare one

    The steaks are nice, but I'm super impressed with that red wine sauce! Whenever I try to make a red wine sauce/glaze, it either comes out too thin, or the sauce breaks even though I keep the butter moving. Any tricks for making it come out like in this video?
