      The Kimchi from chaoxianzu method is quite far from that from south korea.
      Sprite is not put into the kimchi in south korea.
      And taste is different too.
      Please don't misunderstood that the kimchi in china is exactly same with that in south korea.

      +Frog Princess No there's nothing to do with that although the family name "Kim/Gim"(depends on how you spell it) got over 10 million population in total (North+South+China+Russia+Oversea). I'm a chinese so I don't know much about Korea, due to what I've read it was called 딤채 Dimchae which means "sunk (underwater) vegetable" to describe its produce and then it turned to be Kimchi

    Really enjoyed this video and the kimchi production. I was introduced to kimchi while supporting Tiger Division of ROK Army in Vietnam and continue to enjoy occasionally as it is in most grocery stores in the U.S. Kimchi was in a tin in their military rations. Also enjoyed the video comparing MRE's to Chinese rations. I consumed C-rations and LERP rations.

    to everyone losing it over the supposed lack of authenticity with the sprite. Fermentation requires a source of sugar. The corn syrup and sprite will provide this, with the sprite having the bonus of lemon and lime flavouring.
    Sugar is also added to bread for the same reason.

    The sprite is totally unnecessary. All it does is accelerate fermentation. The pear was more than enough. This means kimchi is good as long as its fresh. Otherwise brace yourself for some foul-smelling junk after a while
    Without refined sugar kimchi has a milder and softer tone (as it should be) and fit to be served to kings.

    The "Sprite" is usually Korean "seoīdeo" (cider) which is like half way between a Sprite, a ginger ale, and a Pocari Sweat™. As for every family making their own kimchi, it's true that each kimchi-making family makes it a bit different, but unfortunately a growing amount of people these days grow up having no idea how to make kimchi because their family started just buying it at the store.

    Winston, just a FYI....Chinese cabbage isn’t bok choi, that’s a different thing.....but in the USA, Chinese cabbage is known as “Napa Cabbage”
    My first job was in a produce department at. Big Y supermarket. ;)

Purple, Green, something of colour. ~ Somehow via Korea War all Seed and agriculture was destroyed via Napalm, nay to all palm of Jesus Quran Foods. Then Unites Nations provided free plant seed and grain releif efforts, to free these dark people of the food and plants that provide the DNA pollen that activates their pre-KoreaWar skin Colors.

    Wow this lady is an epidemiologist working for the WHO - in addition to being Kimchi lady. She has rigorous scientific studies demonstrating there were zero cases of SARS due to Korean food.

    Totally agree with C-Milk about not being able to pinpoint the ingredients. I think that's the magic of a lot of East Asian cuisine, they create wonderful flavors and you just can't tell what's in it. I've dabbled a bit in Asian cooking (Indonesian) and it really is like magic. You combine a bunch of ingredients, most of which are actually familiar to a modern westerner, and at the end, something comes out that is wonderful and unexpected.
    Soo Zee and Leigh did a video about Korean cooking not too long ago, and Soo Zee mentioned that kimchi is a pain in the ass to make. I understand now what she meant. It's worth it though, if you ask me. 😊

    I wonder what ingredients go into to make a C-Milk :-) I'm sure you can't tell, ginger, garlic, onions, carrots, apple pears, cabbage, chilli, radish (that's not a turnip btw), spring onions and leaks and don't forget the 7up. I seem to have taken in the ingredients quite well. Then you leave to ferment on a motorcycle for 2 months :-)

    Why are they using the South Korean recipe instead of the North Korean one? As far as I am aware most ethnic Koreans in China have their original hometowns in North Korea, not the south.

      Because the food in respect of Skorean recipe are easy to purcase. Nkorean recipe is less diverse.

    I started riding motorcycles at the age of 4, started racing motor cross at the age of 10, bought my first Harley Fatboy at the age of 16, first Harley Soft Tail at 19, Ultra Classic at 24 .... my point is, I’ve been riding motorcycles for 41 years, riding big bikes for most of those 41 years, & I would still be terrified riding in the insane traffic y’all are riding in in these videos! I’m freaking out at the way y’all are making turns with those crazy drivers, driving between the lanes of vehicles!! Good lord! Y’all are nuts!! Stay safe! Keep having fun!!

    Kimchi does not meen cabbage in korean. They need something sweet in it so pear is one thing you can use and I guess sprite has the same function. Usually you have some anjovis in it too. Recepies can vary alot anf this receipe was a bit special. Also there are over 200 kinds of kimchi but what they made here is the most common one.

    I worked in a Korean owned restaurant for some time and I can actually confirm that Sprite may be used in Kimchi. It was the weirdest thing finding out, but I imagine it's just a super convenient substitute

    I dig your style, ADVChina. This is a cool Channel that does stuff no one else does. You guys bring a different perspective on day-to-day matters in China which is of great entertainment and educational value to both the Chinese and outsiders. I hope your channel takes off.
    The only thing that's a little bit annoying is that sometimes you make all-too-definite comments or claims on things you have little idea about. I think a more prudent way to handle things is to either avoid making judgement calls on unfamiliar objects or to simply do better research before making the videos. I respect you guys having an opinion, which is pretty much the soul of this operation and the reason I watch your videos, but I do hope to see your future videos to be slightly more careful.

    thanks for the awesome video. you guys can eat kimchi either as raw itself or fermented. Each of them has different flavors. I've never seen someone uses sprite in making it, but it seems quite authentic!
