      There are special cooking pots made for pasta which doesn't aggressively boil but they reach the boiling point.I have one at home too :)

    If you're suffer from celiac disease or are a hypochondriac I'd advise against pasta substitutes. There are plenty of noodle-like traditional foods that have no gluten in them, such as dried tofu strands. And eating something that was only made to taste good is almost always going to be better than eating something that was made to substitute something else. Just like you'd rather eat a great indian Dal then a supermarket meat ersatz.

    9:32 he says there will always be egg in stuffed pasta. He calls himself a pasta expert, yet there is plenty of stuffed pasta without egg. So he is not an expert, because he does not know obvious things about pasta.

    I think it is a matter of taste not price. I don't know where he's getting his pasta but the pasta I get is from Gragnano, Italy, is delicious and only costs $6 a bag which is more than a pound, 1.2 pounds I believe. I like. Setaro and Gerardo di Nola

    Surely "the proof of the pudding is in the eating". As in, you have to eat the pudding to know whether it's good or not. "The proof is in the pudding" makes no sense.

    More ridiculous than usual. Pasta is garbage food. Cheap ingredients used to extend food. Worse, it tends to be a staple which humans absolutely cannot have in a healthy diet.

    Pasta is beyond cheap. If you want to spend money on it, consider getting "Miracle Pasta". Carb/calorie free it's 100% fiber. At least then, your pasta dish won't cut 25+ years of your life off with diabetes.

    I have serious doubts that the people at Epicurious eat food, let alone are experts at acquiring and cooking it. It's like every single episode you get it just wrong. Lacking in understanding fundamentals. Hell, common sense.

    Food cooked incorrectly with inferior ingredients you paid a premium for......that's Epicurious.

    Geez...buy a cookbook or something.
