Carla Makes Butter-Basted Steak | From the Test Kitchen | Bon Appétit

    Join Carla Music in the Bon Appétit Test Kitchen as she makes butter-basted steaks with fennel salad. There are just a few steps to make perfect steak: Step 1: Buy a great steak from a great butcher. Step 2: Salt it liberally. Step 3: Gradually build up a crusty sear. Step 4: Butter. Butter?! Yep-butter. Browned, nutty butter will deliver toasty flavor to every bite. It’s the secret to pretty much all the great steakhouse dinners you’ve ever had.

    Protip for people squeamish about anchovies, sardines, or fish sauce: hit it with a dash of Worcestershire sauce. You're still getting the fish, but you don't know or understand it. 😁

    what was the desired final cooking temperature of the steak? what was the cooking time, all totaled? anybody know? thanks. so many commenters seem to think she's the cat's meow somehow. I'm very underwhelmed by her technique and her 'lingo'.

    more butter! and come on it doesnt take all day to get that milard on the steak. turn your pan up learn to control the heat in your cast iron. otherwise why even cook in a high heat pan. plus you dont need oil when you sear just put that bad boy in. the fat from the steak is good and if you have a well seasoned cast iron it should have a good layer of oil anyways but just my observations

    When I season a steak, I like to take a fork and poke the seasoning into the meat. I let it rest for 20-30 minutes and the holes pretty much close up. Is that a bad thing to do?

    Enjoyed the recipe. Spouse and daughter both definitely mange on raw garlic cloves. The FIVE ad interrupts telling me how great Wisconsin is, kind of made me dislike the video as a whole, and feel some dislike for Wisconsin too. So if your advertisers read this, their ads are backfiring.
    But the steak....superb!

    Muscle shouldn't have clumps of fat in between it. The body expels toxins and stores it as fat, that's what "marbling" is. Very unhealthy. And people wonder why their joints hurt and their brain is foggy.

    There should be a side by side test with that same cut of steak using sous vide and the multiple turning butter basting method to see what texture and flavor differences there are.
    I think Heston Blumenthal used the same method when cooking steaks.

    there’s just no such thing as cutting against the grain with ribeyes, strips, filets etc...the individual steaks are already cit against the grain only flank and similar cuts are requiered to be cut against the grain 🤷‍♂️🤷‍♂️

    youre supposed to baste when the butter is frothy, and you need 3x the amount you used. when the butter is not frothy, it is burning, and leaves an astringent taste.
