    I tend not to use white wine because we rarely find uses for it in our cooking (and we don't know how to keep it well). Would it be OK to use apple cider vinegar, rice wine vinegar, or chicken stock?

      Chicken is the species. Hens are female. Roosters are male. As far as taste you want to look at how they're marketed, ie capon, roaster, etc. Each has their own use, but for every day purposes there isn't a huge difference.
      Could be wrong, but I think that's the gist.

    I just did a search for videos on chicken pot pie and found an interesting one from Bon Appetit. It didn't have turnups. It had carrots. It had rosemary, sage and thyme.

    Sweet potato is also a good sub for carrots. I have never had a turnip, but I do make chicken pot pie from scratch about every two months. Dried herbs de Province and a pastry I make that is somewhere between a biscuit and a traditional pie crust brushed with cream or an egg wash if you want. I tend to make it in a large cast iron skillet since I feed a family of 8. Filling is whatever chicken I have sauteed in butter then with sweet and white potatoes and whatever other veggies I have.

    I use Rutabega, and carrots, but not turnips in mine. It's a farmer's dish. Classically, you use whatever you got in the garden, but it's seasonal. If you're going to the grociery store, and you don't like turnips, sub Potatoes, or something, but I have to have carrots in my mirepoix, and peas in my pot pie. That's me, frosen peas are just fine, don't use canned ones. They turn into mush.

    "Besides the fact that there aren't carrots in this dish, it is a pretty classic iteration..." --- She used heavy cream instead of a rue, brushed the crust with cream instead of an egg wash, cooked with wine, baked it in a skillet. And then there's the turnips. This is far from a classic iteration of a pot pie.

    You know I can appreciate trying something different and maybe even preferring some weird alternative but personally I prefer carrots.
    I think it just looks better aesthetically (though im sure there are other root ceggies that can do that) but I also just prefer the taste of carrots over turnips and i kinda like the mushy carrot texture in chicken pot pie. I dont really notice since to me the mushy carrots have a pretty similar texture to peas.

    Carrots is the classic and it gives it a nice sweetness.....I like turnips but those huge turnips take up so much space.....I say use both, medium sized carrot chunks, super small turnip cubes.
