4 Levels of Cinnamon Rolls: Amateur to Food Scientist | Epicurious

  • Published on Sep 11, 2019
  • We challenged chefs of three different levels - an amateur, a home cook and a professional chef - to make their versions of cinnamon rolls. And then we brought in a food scientist to review their work. Which rolls were the best?
Check out the level 3 recipe on the ICE blog: www.ice.edu/blog/croissant-cinnamon-roll-recipe

Pretty sure that yeasted croissant dough is not a really thing. Tracy went through all that effort to make a laminated dough, but her layers will fuse when the temperature rises enough for the yeast to proof. What's the point? You just wasted several hours to make brioche.

"All of our chefs used the same techniques to shape the dough. They [...] rolled the dough into a log and sliced them into rolls."

It is pastry, sometimes it looks like the same as a lvl1 or 2. But the depth and complexity is completely different and that is what makes it amazing.
