    1. Seaweed = Wakame (ワカメ) = 미역
    2. Kelp = Kombu (昆布) = 다시마
    3. Roasted seaweed sheet = Nori (海苔) = 김

    Def want to try with katsuoboshi and red miso - it's slightly bland with instant dashi/shiro miso, imo.

    I know this is an oldish video and I've watched it umpteen times, I thought I'd like to comment.
    The first time I ever tried miso soup I though I'd died and gone to heaven. I never knew what went into it until Martina showed me how simple it was. I love fermented foods and I have a Japanese specific store nearish to me so I will be trying this!

      Oh is that so? ill try it maybe tomorrow since the store nearby has a lot of dried stuff . I think there are dried mushrooms, fish, squid ect. but I'm scared to try the type of dried fish there since its completely different. If you have heard of Daing and Tuyo , which is a Filipino version of dried fish, its what im talking about lol. ill try to make a small batch with it and larger batch with mushrooms and see if it works lol

      Don't worry! You can make the "vegetarian" version of the broth. It won't be as rich and smokey tasting but it'll still taste good. (ps->you can substitute bonito flakes for dried mushrooms if you're a vegetarian too)

    I made this and it is awesome, thank you for sharing. I've been looking for the recipe for the ginger salad drsg at our Japanese Teppanyaki grill. Everytime I try to buy any, it has MSG in it, so I've been buying a pint from the restaurant but it gets used up quick, be nice if I could make up a batch at home.

      Kevin93396 You can cut it up and place it in your bowl of miso soup and eat it, or eat it with rice, in salads, as a stir-fry. Or chop it up finely and dry fry it with some soy sauce and sesame seeds till dry and use it like furikake (rice topping seasoning).

    Just FYI, I don't know where you got the idea that there is a difference between natural and "fake" (presumably packaged MSG powder?) but there is chemically no difference. They are both monosodium glutamate, which means one ion of sodium to one ion of glutamate, and one source doesn't have more sodium than the other. It's essentially the difference between 100% pure tap water and 100% bottled water and calling the bottled water fake and full of excess hydrogen.

    In fact, packaged MSG is usually purified from seaweed to begin with, so it's not even synthetic. Be careful not to fall for the natural = healthy fallacy! Plenty of things not natural are great for you (trace iodide in table salt, medicine, flouride in drinking water) while many natural things are bad for you (tons of highly toxic compounds found in many fruits and vegetables, almost all viruses and bacteria that cause human disease).

    Sorry, love the channel, I'm just a scientist and love spreading the science love.
