    Finally - FINALLY - made this! Sort of. I used the kombu-infused water as the liquid for a homemade chicken broth, pressure cooked 60 mins, strained, bonito, and then whisked in the miso right before serving. Fresh noodles, soy sauce egg, negi, sauteed mushrooms, roasted acorn squash for a killer homemade miso ramen. 😍🍜

    Wow you are very Japanesie more than my mum. My mum uses only “Awase(mixed) miso” which’s already got Dashi in it😂 when she needs Dashi, she uses instant Dashi in a packet😂😂😂

    Quick tip for people who don't eat fish: you can also make dashi by soaking kombu and dried shiitake mushrooms overnight!

    Did you know that it’s really easy to make your own miso too? And after 3 years of fermenting, it becomes medicinal so it’s great for when you’re sick!

    If you don't use/make the Dashi and you just use water + miso paste...I assume it doesn't have as much delicious flavour but can anyone comment on whether it would still taste good (ish)? (As a student, my standards for my own cooking are quite low.)

    Hi guys! I wanted to share with you something that happened today! I live in a very small town in latin america so I had never had true Japanese food. I had had "sushi" but you know. Nothing special or truly japanese. BUT! Today I found out about a tiny tiny restaurant run by a Japanese man married to a Venezuelan woman (they both were THE SWEETEST) so I got sooo excited and finally I tried miso soup. They even showed me inside of the kitchen how they made it! I know this was long af, but i've been having a rough time lately and you have no idea how meaningful this was to me and really lifted me up! I just wanted to let you know for some reason ❤❤❤❤❤🙌🙌

    first of, i just recently found your channel, and i LOVE IT! i have some wierd fasination with Japan, and have had it since i was a little kid, and I love food, so this is the perfect channel to follow. Second, I love your personalitys, and style. you should check out "mind of a chef" with David Chang, since lots of it is based of japanses cousine.

      Kabrielle F. Jones you don't take the fish in the finished miso soup. It doesn't taste 'fishy' at all, it mainly tastes umami and a bit salty from the seaweed and miso (with more depth). No need to fear trying it if you don't like fish.

    wait, wait - you look like you are mixing an aka miso (red miso) and an awase (mixed) miso, not a shiro (white) miso. like it's so strange you are obviously SUPER knowledgeable, knowing to not boil the konbu or the miso but I can swear that is not white miso...

      Satopi3104 she said it correctly at the start when she was explaining the difference between the miso pastes, what she was going to use and why. Then accidentally called it "white miso" after that. It was just a 'brain fart' (unthinking error), she definitely knows the difference by how she explained it at the start. Would have been good if they caught it while editing and put in an annotation so people don't get confused, but oh well 😊

    Lastly About The Martina's Allergy Against Soggy 和刈 Wakame - Seaweed.
    We Japanese LOVE LOVE LOVE Seaweed from Ingredient in Miso Soup, Side Dish of Sashimi Called " 刺身のつま " Sashimi-no-Tsuma Together with Finest Julienne of Daikon Radish to Main Ingredient of 海藻サラダ Seaweed Salad that is Always with Top Popularity in Japanese Department Store's Food Court Section.
    I Suppose That Martina's First Encounter with Wakame in Miso Soup was Unfortunately Very " Flopped " Wakame in The Sequence of Heat & Reheat in Repeat.
    But, MAKE NO MISTAKE, Otherwise Freshly Reconstituted Seaweed Such As 和刈 Wakame or Any Other Seaweed in Water NEVER BEEN BAD Whether You Call it Soggy or NOT !!!!!!
    People Who Are Novice to Japanese Cuisine Shouldn't Be Influenced by Martina's Negative Comment Against Seaweed and Should Try and Give It A Go Without ANY BIAS and/or PREJUDICE Against Japanese Seaweed. Then You'll Love 'em, I'm Sure.
    It is Gift from The Sea. You Can Taste " Sea ".
    Reconstituted Wakame in Cool Condition is Very Good Dipped in Wasabi Soy Sauce, for Instance Together with Sashimi.
    Reconstituted Wakame is Main Ingredient for Seaweed Salad that, Whether in Soy Sauce Based & 大葉 Ohba Leaves Dressing or Sesame Seed Based 胡麻ダレ Dressing, is ReaLly Refreshing and Cleansing Your Palette After Eating Something Greasy !!!!!!!!

    Correction from JAPANESE :1. 昆布 Kombu is Categorized As " Sea Celp(Kelp)" Not As Normal Seaweed Just Like 海苔 Nori or 和布 Wakame in Culinary Jargon of The World.It's Better to Do So in Terms That People Outside JAPAN & Novice to Japanese Cuisine NEVER KNOW WHICH IS NORI & WHICH IS KOMBU. And Sometimes Make A Vital Mistake by Using 海苔 Nori Instead of Kombu When You Make 出汁 Dashi ( Essential Japanese Soup Stock ) As Martina Pointed Out in This Video. So You'd Better Call Kombu " Sea Kelp " Not " Seaweed " in Case That You Mix Up TWO !!!!
    2. Don't Throw Away The Leftover of 昆布Kombu & 鰹節 Katsuobushi - Bonito Flakes !We JAPANESE Call Martina's 1st Batch " 一番出汁(Ichiban-Dashi). That Ought to Be Clearest Dashi. So Martina Needs to Rectify Her Method in This Video A Bit by Adding 鰹節 Bonito Flakes Just After You Took Out Kombu and Put Off The Heat/Fire Completely !!!!This Method is Highly Recommended by Numerous Master Japanese Cuisine Chefs of 料亭 Ryou-Tei ( Exquisite Traditional Japanese Restaurants ) Mainly Because If You Add Bonito Flakes When Water is Boiling You End Up Getting 雑味 Zatsumi - Unfavourable Flavour. So Keep in Mind If You Want TRUE 一番出汁 Ichiban-Dashi, Add Bonito Flakes Just After You Put Off The Heat !We Use Ichiban-Dashi for Subtle & Sophisticated Taste of Dish Such As 澄まし汁 Sumashi-Jiru or Delicate Miso Soup.But You Can Definitely Make 2nd Batch of Dashi out of Leftover Kombu & Katsuobushi of 1st Batch !!!!     3. In This Video Martina Combined 2 Types of Miso. That's Better than One.But It is Widely Believed in JAPAN that Combining 3 Types of Miso Will Bring About BEST RESULT !!!!
    My Recommendation As Follows :40% of 白味噌 Shiro-Miso from 信州 Central Japan or from Kyoto, 40% of 赤味噌 Aka-Miso from 仙台 North Japan and 20% of 麦味噌 Mugi ( Barley ) Miso from 九州 Kyushu Island.Try it !

      Laura Remen mirin isn't added to this traditionally, so if you wanted to you'd add as much as you like, whenever you like.
