Homemade Deep Dish Pizza

    Here's what you'll need!
    Servings: 8
    1¼ cup warm water
    2¼ teaspoon active dry yeast
    2 teaspoons sugar
    3¼ cups flour
    ¾ cup cornmeal
    2 teaspoons salt
    2 tablespoons butter, melted
    1 tablespoon olive oil
    2 tablespoons butter
    1 onion, diced
    1 teaspoon salt
    1 teaspoon crushed red pepper
    1 teaspoon oregano
    2 cloves of garlic, chopped
    1 teaspoon sugar
    1 28-ounce can of crushed tomatoes with basil
    10 slices mozzarella
    ½ pound Italian sausage
    Fresh grated Parmesan

    1. For the pizza sauce, melt the butter in a small saucepan and add the onion, salt, red pepper flakes, and oregano, and sauté until golden brown.
    2. Add the garlic, sugar, and crushed tomatoes, and simmer for roughly 20 minutes or until sauce thickens.
    3. For the dough, combine the active dry yeast, sugar, and warm water together and let sit for one minute.
    4. In a large mixing bowl, combine the flour, cornmeal, and salt.
    5. Add the yeast mixture and butter into the dry ingredients and stir until dough forms.
    6. Bring dough to floured surface and knead until dough forms into a ball.
    7. Move dough to large bowl drizzled with olive oil. Coat dough in oil and cover and let rest for 1 hour.
    8. Remove dough and bring onto floured surface.
    9. Cut dough in half and begin working dough out ensuring that it is at least 2 inches wider than your deep dish pan. Double wrap the remaining dough with plastic wrap and place in a resealable freezer bag. Freeze for up to a month.
    10. Preheat your oven to 425°F/215°C.
    11. Bring your dough into your oiled and floured deep dish pan.
    12. Using your hands press dough into sides of your dish making it as even as possible.
    13. Lay slices of mozzarella across the dough, covering the entire bottom.
    14. Add pieces of uncased Italian sausage on top of the mozzarella and top with tomato sauce.
    15. Bake for 20-25 minutes or until crust starts to lightly brown and the cheese is melted.
    16. Garnish with Parmesan.
    17. Enjoy!

    It's like they combined a stuffed Chicago Style Pizza with a deep pan Chicago style pizza. A lesson for Tasty. A deep pan(dish) pizza has the sauce under the toppings, a stuffed pizza has the sauce on top, but there is a thin layer of dough between the sauce and the toppings. It will turn into a sloppy mess if you combine the two.

    The crust doesn't look quite right- too bready and stiff. Probably from overworking the dough and using too much flour and not enough oil. No real Chicago deep dish uses cornmeal; what you really should be using is corn oil instead of olive oil to get that hint of corn flavor. No need to add butter if you are using enough oil. Corn oil also burns at a higher temp which is more suited for baking your pizza 30+ minutes. I would also recommend not cooking your tomato sauce beforehand. Once you have the dough patted out in the pan and layered with cheese (and sausage if you want), crush a few whole tomatoes into the pan and break it up by hand, then top that off with some uncooked crushed tomatoes until you've covered your cheese and toppings. The tomatoes will cook and release sugar into the pan as it cooks with the rest of the pizza, which is ideally done all in one pan at the same time. If you cook your tomato sauce beforehand you are not letting those flavors bind together nearly as well. If you want the best dough possible, let it rise slowly in refrigeration for 8-48 hours. It will take at least 8 hours in refrigeration to double in size, and after 48 hours the yeast will no longer be active. My personal favorite is right around the 36 hour mark. Bonus points= go to your local grocery store and ask around to see if they have fresh yeast in stock. This will give a better flavor than the packets of dried instant yeast.

    I think you messed up the proportions of cheese and tomato sauce. That cheese needs to be flowing, shred that mozzarella and load it in. But the sauce recipe seems to be right.

    As someone who has had way more Giordano's than is good for them let me just say that is not nearly enough cheese. The dough doesn't seem that far off but try rolling it out, adding butter to it, and folding it back up (like you would with croissants). It gives the dough nice flakey layers. Also, and I know this is picky but toppings usually go under the cheese.

    Everybody who likes Chicago-style pizza should research a dish called sfincione also known as spinciuni. the city of Palermo seems to have many recipes. the first time I went to Chicago, I was shocked to see what I thought to be an obscure dish was so popular. One time my Sicilian parents brought this to a picnic and I was embarrassed to be the only family eating something so ethnic and awkward to hold. Everybody else was eating hot dogs and burgers. in hindsight this was a really cool meal to have at a picnic.
